It’s Easy to Make Your Own Chocolate-Covered Amarena Cherries

  • 1/4 cup of softened butter
  • 2 1/2 cups of icing sugar
  • 2 8-ounce jars of amarena cherries with stems
  • 1/2 teaspoon of almond extract
  • 1 tablespoon of milk
  • 2 tablespoons of shortening
  • 2 cups of semisweet or dark chocolate chips

Combine sugar, milk, extract and butter in a large bowl. Knead the mixture into a ball and then roll small portions into 1 inch balls and flatten. Aim for 2-inch flat circles that can be wrapped around the amarena cherries. Once they have been wrapped, place the cherries with their stems up onto a baking sheet that has been lined with wax paper and refrigerate.

Melt the shortening and the chocolate chips slowly over low heat and a double boiler. Once the cherries have been chilled for at least four hours, they can be individually dipped into the chocolate and then placed back onto the waxed paper. Refrigerate the cherries for at least a week in a covered container before serving them or offering them as a gift.
